CIEH Level 3 Intermediate Certificate Food Safety

The intermediate level course is designed for those working in all food businesses at supervisory level. This includes 'traditional' supervisors and team leaders, but also anyone who needs a broad understanding of food hygiene as part of their work.

For

Owners and managers in small to medium sized organisations, depending on the type of food business, may also find that the intermediate course provides them with sufficient knowledge to carry out their responsibilities effectively.

Outline Programme

This four-day course covers the following:

On-site investigation Bacteriology
Taking of witness statements Food Poisoning and Food Borne Disease
Gathering of evidence, measurements, photographs Physical Contamination of food and its Prevention
Collation of supporting documentation Food Storage and Temperature Control
Collation of supporting documentation Food Preservation
Collation of supporting documentation Personal Hygiene
Collation of supporting documentation Design and Construction of Food Premises
Collation of supporting documentation Cleaning and Disinfection
Collation of supporting documentation Pest Control
Collation of supporting documentation Legislation


Course Duration

3 days (8 hours) 0900-1700 (Day 4 is for a half day revision and exam to conclude the course)

Candidates will also need to attend an authorised on-line testing centre or complete the 2 hour written examination which is arranged upon completion of the course.
